Banana & cinnamon compote

Compote is the ultimate sweet comfort food that’s also a sickbed soother, and pretty much works as baby food as well! Perhaps that’s why it’s so comforting 🙂

If food is my medicine, then a bowl of banana and cinnamon compote is the perfect kickstart to a day of mooching on the couch when I can’t make it to work 😀

If you’re feeling under the weather, or just a bit down and in need of comfort food, or if you just fancy a soothing sweet treat that’s healthier than it sounds, whip up a pot of this, and you’ll be satisfyingly soothed about 20 minutes from now! Get cracking…! 😀

Flavour: Warming, sweet & tangy

Serves: 1 as a substantial sick-bed meal

Ingredients:

  • half cup water
  • 2 bananas
  • quarter teaspoon cinnamon
  • juice of half a lemon
  • 1 teaspoon honey

Directions:

  1. Chop your banana up into small-ish pieces (no need for any kind of precision here!), and pop them into a small saucepan with half a cup of water and quarter of a teaspoon of cinnamon – turn heat to high, and stir ingredients to combine
  2. Once your mixture has reached boiling point, reduce the heat to medium and simmer until you have a thick mixture resembling baby food
  3. Add lemon juice and honey, stir well to combine, and remove from heat
  4. Serve immediately, either on its own, or with the breakfast/brunch treats of your choice (hint: this works well with pancakes or French toast 😉 )
