Crushed, toasted peanuts are a wonderfully crunchy, salty accompaniment to a wide range of dishes both savoury and sweet. Some of my favourite dishes that can be taken up a notch with the addition of crushed, toasted peanuts are:
- Chocolate ice cream (preferably with caramel sauce)
- Som tam (papaya salad)
- Mango salad
- Larp (Thai herbs salad)
Ingredients (always good to have some of this prepped in advance):
- 1 cup peanuts
- A few drops of sesame oil (you can use an unflavoured oil such as sunflower if you prefer)
- Half a teaspoon of salt
Directions:
- Pop the peanuts, oil and salt in a frying pan over a high heat, and shake the pan every so often so the nuts toast evenly – you should have nicely toasted nuts after 5 minutes or less
- Pop the nuts in a food processor and grind until you have crunchy little salty fragments of the size you’re after
- Store your crushed, toasted peanuts in an airtight container in the fridge
- Sprinkle liberally on top of any dish you think could benefit from a bit of salty crunch 😉
